1 cup (175 grams) white chocolate chips
1/4 cup (60 ml) heavy cream
1 teaspoon vanilla extract
1/2 cup (60 grams) dried cranberries, finely chopped
1/2 cup (60 grams) pistachios, finely chopped
Additional chopped pistachios and cranberries for rolling
Directions:
Melt Chocolate:
In a heatproof bowl, combine the white chocolate chips and heavy cream.
Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted.
Add Flavorings:
Stir in the vanilla extract, chopped cranberries, and chopped pistachios.
Chill Mixture:
Refrigerate the mixture for about 1 hour, or until it is firm enough to handle.
Form Truffles:
Use a small cookie scoop or spoon to scoop out small amounts of the mixture.
Roll into balls between your palms.
Coat Truffles:
Roll each truffle in additional chopped pistachios and cranberries to coat.
Chill Again:
Place the truffles back in the refrigerator for at least 30 minutes to firm up before serving.
