Country Fried Pork Chops with Rich Gravy

Ingredients:

– 4 bone-in pork chops, about 1 inch thick
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 cup all-purpose flour
– 2 large eggs
– 1/4 cup milk
– 1 cup buttermilk
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon paprika
– Vegetable oil for frying

For the Gravy

– 1/4 cup drippings from fried pork chops
– 1/4 cup all-purpose flour
– 2 cups milk
– Salt and pepper to taste

Instructions

1. Start by seasoning the pork chops with salt and pepper on both sides.
2. In one shallow bowl, place the flour. In another shallow bowl, whisk together the eggs and milk. In a third bowl, place the buttermilk mixed with garlic powder, onion powder, and paprika.
3. Dredge each pork chop in flour, shaking off the excess. Dip them into the egg mixture, then coat them again in the flour, pressing to adhere.
4. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the pork chops, cooking for about 4-5 minutes per side or until golden brown and cooked through. Transfer the cooked pork chops to a paper towel-lined plate to drain.
5. For the gravy, pour off most of the oil from the skillet, leaving about 1/4 cup of drippings. Whisk in the flour and cook over medium heat, stirring constantly, until golden brown.
6. Gradually whisk in the milk, continuing to stir until the gravy thickens. Season with salt and pepper to taste.
7. Serve the country fried pork chops with the rich gravy poured over the top.
