Ingredients:
– 398 mL canned crushed pineapple (very well drained)
– 8 ounces cream cheese (softened)
– 2 cups unsweetened fine desiccated coconut
– ½ cup graham crumbs
– 3-ounce packet pineapple jello
Instructions:
1. Add the room temperature cream cheese to a large bowl. Using a mixer to beat the cream cheese helps to loosen it up and avoids any lumps in the finished product.
2. Next, add in the pineapple, one cup of the coconut, the graham crumbs, and the packet of pineapple jello. Just toss the powder into the bowl with the other ingredients; there’s no need to prepare the jello first.
3. Mix the ingredients well until thoroughly combined.
4. Place the bowl in the fridge for one hour.
5. Once ready, portion the mixture into tablespoons and roll into balls. Roll the balls into the remaining coconut.
6. Place finished Pineapple Christmas Balls into a food-safe container and keep refrigerated.
Tips and options:
– For added flavor, consider mixing in chopped nuts or mini chocolate chips.
– If you prefer a different fruit flavor, try using different flavored jello.
– To make these festive, you can dip the balls in white chocolate before rolling in coconut.
– These can be made ahead of time and stored in the fridge for a few days. Enjoy!
