Leftover Mashed Potato Cheese Puffs 

Ingredients:

2 cups leftover mashed potatoes
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 large egg
2 tbsp all-purpose flour
1/4 cup chopped green onions
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup breadcrumbs (for coating)
Cooking spray or oil (for greasing)

Instructions:

Preheat Oven:

Preheat oven to 400°F (200°C). Lightly grease a baking sheet or line with parchment paper.
Mix Ingredients:

In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, chopped green onions, garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
Form Puffs:

Using your hands, shape the mixture into small balls, about the size of a golf ball.
Roll each ball in breadcrumbs to coat evenly.
Bake:

Place the potato puffs on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with a little oil.
Bake for 20-25 minutes, or until golden brown and crispy.
Serve:

Serve warm, with a side of sour cream or your favorite dipping sauce.

Notes:

For an extra cheesy touch, insert a small cube of cheese into the center of each puff before baking.
