Ingredients:
4 boneless, skinless chicken breasts
8 slices of bacon
4 tbsp pesto sauce
4 slices mozzarella cheese
Salt and pepper to taste
1 tbsp olive oil
Fresh parsley, chopped for garnish
Instructions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Flatten the chicken breasts to about 1/4 inch thickness using a meat mallet.
Season each chicken breast with salt and pepper.
Assemble the Rolls:
Spread 1 tablespoon of pesto sauce over each chicken breast.
Place a slice of mozzarella cheese on top of the pesto.
Roll up the chicken tightly and wrap each roll with 2 slices of bacon. Secure with toothpicks if necessary.
Cook the Chicken:
Heat olive oil in a skillet over medium-high heat. Sear the chicken rolls until the bacon is crispy and golden on all sides.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked.
Serve:
Let the chicken rest for a few minutes after baking.
Slice into medallions and garnish with chopped parsley. Drizzle any pan juices over the top for added flavor.
