Ingredients:
2 sirloin or filet mignon steaks
2 tbsp olive oil
1 tbsp butter
1 small shallot, finely chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1 tsp Dijon mustard
1 tsp Worcestershire sauce
½ cup beef broth
2 tbsp heavy cream
Fresh parsley, chopped (for garnish)
Salt and pepper to taste
Instructions:
Season steaks with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear steaks for 3-4 minutes per side. Remove and set aside.
In the same skillet, melt butter and sauté shallots, garlic, and mushrooms for 2-3 minutes.
Stir in Dijon mustard, Worcestershire sauce, and beef broth, cooking for 3 minutes until reduced slightly.
Add heavy cream and simmer until the sauce thickens, about 2 minutes.
Return steaks to the skillet, spoon sauce over them, and garnish with parsley before serving.
Notes:
For an extra touch, you can flambé the sauce with a splash of brandy before adding the broth!
