Cheesy Mississippi Mud Potatoes

Ingredients

2 lbs baby potatoes, quartered
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 ½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
6 slices bacon, cooked and crumbled
4 green onions, chopped

Directions

Preheat Oven: Set oven to 400°F (200°C).
Season Potatoes: Toss quartered potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them in a single layer on a baking sheet.
Roast Potatoes: Roast in the preheated oven for 25-30 minutes until golden brown and crispy, stirring halfway through.
Add Cheese & Bacon: Once potatoes are crispy, sprinkle shredded cheddar and mozzarella cheeses evenly over them. Scatter crumbled bacon on top.
Melt the Cheese: Place the baking sheet back in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Garnish & Serve: Remove from the oven and garnish with chopped green onions. Serve hot and enjoy!
