Creamy Chicken Rice Recipe 

Ingredients:

1 lb boneless, skinless chicken breasts, diced
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 cup uncooked rice
2 cups chicken broth
1 cup heavy cream
1 teaspoon Italian seasoning
Salt and pepper to taste
½ cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Instructions:

1️⃣ Heat olive oil in a large pan over medium heat. Cook the chicken until browned, then remove and set aside.

2️⃣ In the same pan, sauté the onion and garlic until softened.

3️⃣ Stir in the rice and cook for 1 minute, then add the chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then lower the heat, cover, and simmer for 15-20 minutes until the rice is cooked.

4️⃣ Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens.

5️⃣ Return the chicken to the pan and stir to combine. Garnish with fresh parsley and serve.

Notes:

Add some peas or broccoli for a pop of color and extra veggies!
