Garlic Butter Lobster Bites with Saffron Mash 

Ingredients:

2 lobster tails, cut into bite-sized pieces
4 tablespoons butter
3 cloves garlic, minced
4 Yukon gold potatoes, peeled and cubed
1/2 teaspoon saffron threads
1/2 cup heavy cream
Salt and pepper, to taste
Fresh parsley, for garnish

Instructions:

Prepare the Saffron Mash:

Place the peeled and cubed Yukon gold potatoes in a pot. Add the saffron threads and enough water to cover the potatoes.
Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Mash the potatoes with the heavy cream and 2 tablespoons of butter until smooth.
Season the mash with salt and pepper to taste. Keep the mash warm and set aside.

Cook the Lobster Bites:

In a large skillet, melt the remaining 2 tablespoons of butter over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the lobster pieces to the skillet and cook for 3-4 minutes, or until the lobster turns opaque and is just cooked through.
Season the lobster bites with salt and pepper to taste.
