Banana Fritters

Ingredients:

– 2 eggs at room temperature
– ⅔ cup milk at room temperature
– 1 tablespoon unsalted butter, melted
– 1 teaspoon vanilla extract
– 1 ½ cups all-purpose flour
– 2 tablespoons brown sugar
– 2 teaspoons baking powder
– ½ teaspoon ground cinnamon
– ¼ teaspoon salt
– 3 ripe bananas, chopped
– Vegetable oil for frying

For the Glaze:
– 2 cups powdered sugar
– ⅓ cup milk
– ½ teaspoon vanilla extract
– ⅛ teaspoon ground cinnamon

Directions:

1. In a medium mixing bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
2. In a separate large bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, and salt. Mix until evenly distributed.
3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
4. Gently fold in the chopped bananas until evenly incorporated.
5. Heat vegetable oil in a deep skillet or frying pan over medium heat. The oil should be about 1-2 inches deep.
6. Once the oil is hot, carefully drop spoonfuls of the batter into the oil. Fry the fritters in batches, making sure not to overcrowd the pan.
7. Fry each fritter for about 2-3 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to drain excess oil.
8. While the fritters cool slightly, prepare the glaze. In a small mixing bowl, whisk together the powdered sugar, milk, vanilla extract, and ground cinnamon until smooth.
9. Drizzle the glaze over the warm banana fritters, allowing it to set before serving.
