Ingredients:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional, for heat)
Salt and pepper to taste
1 bell pepper, sliced
1 onion, sliced
1 lime, juiced
Fresh cilantro for garnish
Instructions:
Prepare the chicken: Slice the chicken breasts into thin strips. In a large bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken strips and toss to coat evenly with the spice mixture.
Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5-7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside.
Sauté the vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for 4-5 minutes until softened and slightly charred.
Combine and serve: Return the chicken to the skillet with the vegetables. Squeeze lime juice over the top and cook for an additional 2 minutes, until everything is heated through and sizzling.
Garnish: Sprinkle with fresh cilantro and serve hot.
Notes:
Serve with warm tortillas, guacamole, and salsa for a complete meal.
