Grilled Sloppy Joe Burritos

Ingredients:

For the Sloppy Joe Filling:
1 lb ground chicken
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, finely chopped
1 cup ketchup
1/2 cup barbecue sauce
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1/2 tsp ground black pepper
1/4 tsp salt
For the Burritos:
4 large flour tortillas
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup sour cream
1/4 cup chopped fresh cilantro (optional)

Directions:

Prepare the Sloppy Joe Filling:
In a large skillet, cook the ground chicken over medium heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
Add the chopped onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
Stir in the ketchup, barbecue sauce, brown sugar, Worcestershire sauce, smoked paprika, black pepper, and salt. Simmer for 10-15 minutes, until the sauce is thickened and flavors are well combined.
Assemble the Burritos:
Lay out the flour tortillas on a flat surface. Divide the Sloppy Joe filling evenly among the tortillas, placing it in the center of each.
Top each portion with shredded cheddar cheese.
Fold in the sides of the tortillas, then roll up tightly from the bottom to form a burrito.
Grill the Burritos:
Preheat a grill pan or outdoor grill over medium heat.
Place the burritos seam-side down on the grill and cook for 3-4 minutes per side, or until they are golden brown and crispy, and the cheese is melted inside.
Serve:
Remove the burritos from the grill and let them rest for a couple of minutes before slicing in half.
Garnish with shredded lettuce, diced tomatoes, sour cream, and chopped cilantro if desired.
