You will need:

lngredients

For the Meatloaf:

1 Β½ lbs ground beef (85% lean)
1 cup breadcrumbs (plain or Italian-style)
1 cup shredded Swiss cheese (plus extra for topping)
1/2 cup onion, finely chopped
1/2 cup mushrooms, finely chopped
2 cloves garlic, minced
2 large eggs
1/4 cup milk
2 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
For the Mushroom Gravy:

1 cup mushrooms, sliced
2 tbsp butter
1 tbsp all-purpose flour
1 1/2 cups beef broth
1 tbsp Worcestershire sauce
1/2 tsp garlic powder
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)

Directions:

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, shredded Swiss cheese, chopped onion, chopped mushrooms, minced garlic, eggs, milk, Worcestershire sauce, ketchup, dried thyme, salt, and black pepper. Mix until all ingredients are well combined. Be careful not to overmix, as this can make the meatloaf tough.

Shape the Meatloaf: Shape the meat mixture into a loaf shape that will fit into your slow cooker. You can also use a loaf pan liner or aluminum foil to help shape and lift the meatloaf out of the slow cooker after cooking.

Cook the Meatloaf: Place the shaped meatloaf into the slow cooker. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the internal temperature reaches 160Β°F (71Β°C).

Prepare the Mushroom Gravy: About 30 minutes before the meatloaf is done, prepare the mushroom gravy. In a medium skillet, melt the butter over medium heat. Add the sliced mushrooms and sautΓ© for 4-5 minutes, until softened and slightly browned. Sprinkle the flour over the mushrooms and stir to coat. Gradually whisk in the beef broth, Worcestershire sauce, and garlic powder. Simmer for 5-7 minutes, stirring occasionally, until the gravy thickens. Season with salt and black pepper to taste.

Add Cheese Topping: Once the meatloaf is cooked, sprinkle extra shredded Swiss cheese over the top. Cover the slow cooker and let the cheese melt for about 5 minutes.

Serve: Carefully lift the meatloaf out of the slow cooker and place it on a serving platter. Pour the mushroom gravy over the meatloaf or serve it on the side. Garnish with freshly chopped parsley.

Enjoy your Slow Cooker Mushroom Swiss Meatloaf as a comforting and delicious dinner, perfect for any night of the week!
