Slow Cooker Pineapple Pork Loin

Ingredients:

2 lb pork loin
1 can (20 oz) pineapple chunks in juice, drained (reserve juice)
1/4 cup soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 tsp ginger, minced
1/2 tsp black pepper
1/4 cup chicken broth
1 tbsp cornstarch mixed with 2 tbsp water

Instructions:

In a bowl, mix reserved pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper.
Place the pork loin in the slow cooker and pour the mixture over it.
Add the pineapple chunks around the pork. Pour in the chicken broth.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork is tender.
Remove the pork and set aside. Stir the cornstarch mixture into the slow cooker, cooking on high for 5-10 minutes until the sauce thickens.
Slice the pork and serve with the pineapple sauce.
Notes:

For a tangier flavor, add a splash of rice vinegar to the sauce.
