 Ingredients :

Beef ribs, 3 pounds.
Salt and pepper.
Vegetable oil, 3 tbsp.
Celery, chopped.
Carrot, chopped.
Onion, chopped.
Garlic, minced, 4 cloves.
Tomato paste, 2 tbsp.
Apple cider vinegar, 1/4 cup.
Red pepper flakes, 1 tsp.
Bay leaves, 2.
Chicken stock, 2 1/2 cups.
Fresh parsley, chopped, 2 tbsp.

Instructions

For Braised Beef Ribs :

Begin by setting your oven temperature to 350°F.
Dry the beef ribs, seasoning with salt and pepper.
Warm 2 tablespoons of oil in a Dutch oven over medium-high heat and brown ribs thoroughly on all sides.
Transfer the ribs aside and add the last tablespoon of oil in the same pot at medium heat.
Introduce chopped carrots, celery, and onion, seasoning them lightly. Sauté until they soften, roughly 5 minutes.
Incorporate the minced garlic and sauté briefly until aromatic.
Mix in the tomato paste, stirring constantly for about 3 minutes to eliminate any raw taste.
Pour in the apple cider vinegar to deglaze the pot, followed by the red pepper flakes and bay leaves.
