Baked Cheese-Stuffed Spinach Chicken Breast

Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
2 cloves garlic, minced
4 cups fresh spinach leaves
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Toothpicks (for sealing)

Directions:

1️⃣ Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set aside.
2️⃣ Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the fresh spinach leaves and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
3️⃣ In a mixing bowl, combine the cooked spinach, ricotta cheese, shredded mozzarella, grated Parmesan, Italian seasoning, and a pinch of salt and pepper. Mix until well combined.
4️⃣ Prepare the Chicken: Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Season the chicken breasts with salt, pepper, and paprika.
5️⃣ Stuff the Chicken: Spoon the spinach and cheese mixture into each chicken breast, filling them generously. Secure the openings with toothpicks to keep the filling inside.
6️⃣ Bake the Chicken: Place the stuffed chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
7️⃣ Serve: Remove the toothpicks before serving. Plate the stuffed chicken breasts and serve hot, with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.
