Directions:
Prepare the Pork Chops:
Preheat your oven to 400°F (200°C).
In a small bowl, mix the olive oil, rosemary, thyme, garlic, salt, and pepper.
Rub the herb mixture all over the pork chops, ensuring they are well coated.
Place the pork chops on a baking sheet and bake for 20-25 minutes, or until they reach an internal temperature of 145°F (63°C). Let them rest for a few minutes before serving.
Make the Garlic Potatoes:
While the pork chops are baking, toss the potatoes with olive oil, garlic, salt, and pepper in a large bowl.
Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
