Ingredients:
3 peaches, halved and pitted
1 cucumber, thinly sliced
1/4 cup fresh basil leaves, chopped
1/2 cup plain Greek yogurt
1 tbsp honey
1 tsp fresh ginger, grated
Juice of 1 lime
Salt and pepper to taste
Instructions:
Preheat a grill or grill pan to medium heat. Grill the peach halves for 2-3 minutes on each side, until they have grill marks and are slightly softened. Remove from the grill and let cool, then slice.
In a large bowl, combine the grilled peach slices, cucumber, and basil.
In a small bowl, whisk together the yogurt, honey, grated ginger, lime juice, salt, and pepper to make the dressing.
Drizzle the honey-ginger yogurt dressing over the salad and toss gently to combine.
Serve immediately, garnished with additional basil leaves if desired.
