Cornbread Taco Bake

Ingredients:

1 lb ground beef
1 packet taco seasoning
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed
1 cup salsa
1 box Jiffy cornbread mix
1 egg
1/3 cup milk
1 cup shredded cheddar cheese
Optional toppings: sour cream, green onions, jalapeños

Directions:

Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Stir in the taco seasoning, corn, black beans, and salsa. Cook for 2-3 minutes until well combined.
Pour the beef mixture into the prepared baking dish and spread it evenly.
In a bowl, prepare the cornbread mix by combining the Jiffy mix, egg, and milk. Stir until smooth.
Pour the cornbread batter over the beef mixture and spread it evenly.
Sprinkle the shredded cheddar cheese on top.
Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through.
Let it cool slightly before serving. Add your favorite toppings and enjoy!
