Cheesy Beef and Bell Pepper Casserole

Ingredients:

1 lb ground beef
3 bell peppers (red, green, yellow), diced
1 onion, chopped
2 cloves garlic, minced
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (8 oz)
1 ½ cups cooked rice
2 cups shredded cheddar cheese
1 tsp Italian seasoning
Salt and pepper to taste
Olive oil for sautéing

Directions:

Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
Add onion, garlic, and bell peppers to the skillet. Cook until softened.
Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let it simmer for 5 minutes.
Add cooked rice to the mixture and stir until well combined.
Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy!
