Ingredients:
For the Apples:
4 large apples (Honeycrisp, Granny Smith, or your choice)
1 tablespoon lemon juice
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
For the Crisp Topping:
1/2 cup rolled oats
1/4 cup all-purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup unsalted butter, melted
1/4 cup chopped pecans or walnuts (optional)
For Serving:
Vanilla ice cream or whipped cream (optional)
Caramel sauce (optional)
Directions:
1️⃣ Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper or lightly grease it.
2️⃣ Prepare the Apples: Slice off the tops of the apples and use a spoon or melon baller to carefully scoop out the core and some of the flesh, leaving about 1/4-inch thick walls. Brush the inside of each apple with lemon juice to prevent browning.
3️⃣ In a small bowl, mix together the brown sugar and ground cinnamon. Sprinkle this mixture inside each hollowed-out apple.
4️⃣ Make the Crisp Topping: In a medium bowl, combine the rolled oats, flour, brown sugar, cinnamon, and nutmeg. Stir in the melted butter until the mixture is crumbly. If using, fold in the chopped nuts.
5️⃣ Spoon the crisp topping mixture into each apple, packing it slightly and mounding it on top.
6️⃣ Place the stuffed apples in the prepared baking dish. Bake for 30-35 minutes, or until the apples are tender and the topping is golden brown.
7️⃣ Serve: Serve the baked apples warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream. Drizzle with caramel sauce if desired.
