Long John Silver’s Batter Recipe

Ingredients:

1 cup all-purpose flour
1 tablespoon cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 cup cold water
1/4 cup club soda
Oil for frying

Directions:

In a bowl, whisk together flour, cornstarch, baking soda, baking powder, sugar, salt, onion powder, and garlic powder.
Slowly add cold water and club soda, mixing until the batter is smooth and lump-free.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Dip fish fillets, chicken, or shrimp into the batter, letting any excess drip off.
Fry until golden brown and crispy, about 3-5 minutes per side.
Drain on paper towels and serve hot.
