Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 jar roasted red peppers, sliced
1 cup fresh spinach leaves
1 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried Italian herbs
Salt and pepper to taste
2 tablespoons olive oil

Directions:

Preheat your oven to 375°F (190°C).
Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Season the inside of each chicken breast with garlic powder, onion powder, Italian herbs, salt, and pepper.
Stuff each chicken breast with roasted red pepper slices, spinach leaves, and a generous handful of mozzarella cheese.
Secure the opening with toothpicks if necessary.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
