Taco Soup Recipe

Ingredients :

Before you start cooking, gather all the necessary ingredients. Here’s what you’ll need:
1 lb ground beef
1 medium onion, chopped
1 can of kidney beans, drained and rinsed
1 can of black beans, drained and rinsed
1 can of corn, drained
1 can of diced tomatoes with green chilies (Rotel)
1 can of tomato sauce
1 packet of taco seasoning
1 packet of ranch dressing mix
2 cups of water or beef broth
Salt and pepper to taste

Instructions:

Step 1: Cook the Ground Beef
In a large pot, brown the ground beef over medium heat until fully cooked. Break the beef into small crumbles as it cooks. Drain any excess fat.
Step 2: Sauté the Onion
Add the chopped onion to the pot with the cooked ground beef. Sauté until the onion becomes translucent and tender, about 5 minutes.
Step 3: Add the Seasonings
Sprinkle the taco seasoning and ranch dressing mix over the beef and onion mixture. Stir well to ensure that the seasonings coat the meat evenly.
Step 4: Combine the Ingredients
Pour in the drained kidney beans, black beans, corn, diced tomatoes with green chilies, tomato sauce, and water or beef broth. Stir the mixture until all the ingredients are well combined.
Step 5: Simmer the Soup
Bring the soup to a boil, then reduce the heat to low. Let the soup simmer for about 30 minutes, stirring occasionally. This allows the flavors to meld together.
Step 6: Season and Serve
Taste the soup and add salt and pepper as needed. Once seasoned to your liking, serve the Taco Soup hot, topped with your favorite garnishes like shredded cheese, sour cream, sliced jalapeños, or fresh cilantro.
