Creamy Chicken and Gnocchi 

Ingredients:

1 pound (450g) chicken breast, cut into bite-sized pieces
1 tablespoon olive oil
2 cloves garlic, minced
1 small onion, finely chopped
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 package (16 oz) potato gnocchi
2 cups fresh spinach, roughly chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Method:

1️⃣ Cook the Chicken:
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
2️⃣ Sauté the Aromatics:
In the same skillet, add the minced garlic and chopped onion. Sauté for 2-3 minutes, until the onion is soft and translucent. Stir in the Italian seasoning and red pepper flakes (if using).
3️⃣ Prepare the Creamy Sauce:
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Add the heavy cream and grated Parmesan cheese, stirring until the cheese is melted and the sauce thickens slightly.
4️⃣ Cook the Gnocchi:
Add the gnocchi to the skillet, stirring to coat them in the creamy sauce. Let the gnocchi cook in the sauce for 3-4 minutes, until they are tender and heated through.
5️⃣ Combine and Serve:
Return the cooked chicken to the skillet along with the chopped spinach. Stir everything together until the spinach wilts and the chicken is warmed through. Taste and adjust seasoning with salt and pepper if needed. Serve the creamy chicken and gnocchi hot, garnished with fresh parsley.
