Ingredients:
4 cups mashed potatoes (cooled)
1 cup grated Parmesan cheese
1 cup bread crumbs
2 eggs, beaten
1/2 cup chopped green onions
Salt and pepper to taste
Oil for frying
Directions:
In a large bowl, combine the mashed potatoes, chopped green onions, and season with salt and pepper.
Shape the potato mixture into small patties.
Dip each patty into the beaten eggs, then coat with a mixture of bread crumbs and Parmesan cheese.
Heat oil in a frying pan over medium heat.
Fry the potato cakes until golden brown on each side, about 3-4 minutes per side.
Drain on paper towels and serve warm.
