Baked Pineapple BBQ Chicken Breast 

Ingredients:

4 boneless, skinless chicken breasts
1 cup BBQ sauce
1 can (20 ounces) pineapple slices, drained (reserve juice)
1 red bell pepper, sliced
1 small red onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper, to taste
Fresh cilantro or parsley, chopped (for garnish)

Instructions:

Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with cooking spray or oil.
Prepare Chicken: In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this seasoning mixture all over the chicken breasts.
Sear Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
Assemble in Baking Dish: In the prepared baking dish, spread a thin layer of BBQ sauce on the bottom. Place the seared chicken breasts on top. Pour the remaining BBQ sauce over the chicken, making sure each piece is well coated.
Add Pineapple and Veggies: Arrange the pineapple slices over the chicken breasts. Scatter the sliced red bell pepper and red onion around the chicken.
Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Baste the chicken with the BBQ sauce and pineapple juice from the baking dish halfway through the cooking time.
Broil (Optional): For a caramelized finish, you can broil the chicken for an additional 2-3 minutes at the end of the baking time. Watch closely to prevent burning.
Garnish and Serve: Once baked, remove the dish from the oven. Let the chicken rest for a few minutes before serving. Garnish with freshly chopped cilantro or parsley. Serve with your favorite side dishes.
