Ingredients:

– 1 1/2 heaping cups fresh broccoli florets
– 1 cup shredded Colby cheese
– 1 cup shredded cheddar cheese
– 4 ounces of Velveeta, diced into small pieces
– 1/2 teaspoon crushed red pepper flakes
– 2 1/4 cups Panko crumbs, divided
– 1 egg, lightly beaten
– 1/2 cup all-purpose flour
– 2 eggs, lightly beaten (for coating)
– Vegetable or Canola oil (for frying)

Instructions:

1. Prepare the Broccoli: Steam, drain, and finely chop broccoli.
2. Mix the Ingredients: Combine broccoli, cheeses, Velveeta, red pepper flakes, and 1/4 cup Panko crumbs.
3. Form the Balls: Add beaten egg, mix, and shape into golf ball-sized portions.
4. Coat the Balls: Roll in flour, dip in beaten eggs, and coat in Panko crumbs.
5. Fry the Balls: Fry in hot oil until golden brown and crispy.
6. Drain and Serve: Remove from oil, drain on paper towels, and serve hot.
