2 pounds ground beef
1 onion, finely chopped
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
2 eggs
1/2 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
8 slices provolone cheese
1/2 cup beef broth (optional, for extra juiciness)
Instructions:
Prepare the Vegetables: In a skillet over medium heat, sauté the onions, green bell pepper, red bell pepper, and garlic until soft and slightly caramelized. Set aside to cool.
Mix the Meatloaf: In a large bowl, combine ground beef, cooled vegetable mixture, breadcrumbs, eggs, milk, Worcestershire sauce, salt, and pepper. Mix thoroughly.
Layer with Cheese: Press half of the meat mixture into a loaf pan. Lay slices of provolone cheese over the meat, leaving a small border around the edges. Cover with the remaining meat mixture, sealing the edges to enclose the cheese.
