Cheesy Beef Quesadillas 

Ingredients:

1 lb ground beef
4 large flour tortillas
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 onion, finely chopped
2 cloves garlic, minced
1 green bell pepper, diced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil

Directions:

In a skillet over medium heat, add the ground beef, onion, garlic, and green bell pepper. Cook until beef is browned and vegetables are tender.
Stir in chili powder, cumin, paprika, salt, and pepper. Cook for another minute until fragrant.
Remove from heat and set aside.
Heat a clean skillet over medium heat and brush lightly with olive oil.
Place a tortilla in the skillet, sprinkle a quarter of the cheddar and Monterey Jack cheeses, then a quarter of the beef mixture over half of the tortilla.
Fold the tortilla over to enclose the filling and press down gently with a spatula to seal.
Cook until the underside is golden brown, then flip and cook until the other side is golden brown and the cheese is melted.
Remove from the skillet and repeat with the remaining tortillas.
Cut each quesadilla into wedges and serve hot.
