Ingredients:
3 cups (300g) broccoli florets, finely chopped
1 cup (120g) shredded cheddar cheese
1/2 cup (60g) whole wheat flour
2 large eggs, beaten
1/4 cup (30g) grated Parmesan cheese
2 garlic cloves, minced
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil (for frying)
Directions:
Bring a large pot of salted water to a boil. Add the finely chopped broccoli florets and cook for 2-3 minutes until tender. Drain and let cool slightly.
In a large bowl, combine the cooked broccoli, shredded cheddar cheese, whole wheat flour, beaten eggs, grated Parmesan cheese, minced garlic, salt, and black pepper. Mix well until all ingredients are evenly combined.
Heat the olive oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the broccoli mixture and shape it into a small patty. Repeat with the remaining mixture.
Place the patties in the hot skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
Transfer the fritters to a plate lined with paper towels to drain any excess oil.
Serve warm, garnished with additional grated Parmesan cheese or a dollop of sour cream, if desired.
