French Onion Meatloaf 

Ingredients:

1 tablespoon olive oil
2 large onions, thinly sliced
2 teaspoons sugar
1 1/2 pounds ground beef
1 cup breadcrumbs
1 cup shredded mozzarella cheese
1/2 cup beef broth
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 teaspoons dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 large egg, beaten

Directions:

Preheat your oven to 350°F (175°C). Grease a loaf pan.
Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 20 minutes. Add the sugar halfway through the cooking process to help with caramelization.
In a large bowl, combine the ground beef, breadcrumbs, shredded mozzarella, beef broth, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, salt, pepper, and beaten egg. Mix until all ingredients are well combined.
Stir in half of the caramelized onions into the meat mixture.
Press the meat mixture into the prepared loaf pan.
Spread the remaining caramelized onions over the top of the meatloaf.
Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through.
Let the meatloaf rest for 10 minutes before slicing and serving.
