Slow Cooker Beef Stew

Ingredients:

2 lbs beef stew meat, cut into cubes
4 carrots, sliced
4 potatoes, diced
1 onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine (optional)
1 can diced tomatoes (14.5 oz)
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp flour (for thickening, optional)

Directions:

Place the beef, carrots, potatoes, onion, and garlic into the slow cooker.
In a bowl, mix together beef broth, red wine (if using), diced tomatoes, tomato paste, thyme, rosemary, salt, and pepper. Pour over the meat and vegetables.
Cover and cook on low for 8 hours or high for 4 hours, until beef is tender.
If desired, mix flour with a small amount of water to create a slurry. Stir into the stew 30 minutes before serving to thicken.
