Ingredients

– 1 lb. Italian sausage
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon dried parsley
– 1/2 teaspoon dried oregano
– 1/4 teaspoon crushed rosemary
– 1/4 teaspoon dried thyme leaves
– 1/4 teaspoon dried marjoram
– 1/4 teaspoon crushed red pepper
– 2 tablespoons butter
– 2 tablespoons vegetable oil
– 1 lb fresh gnocchi
– 2/3 cup sundried tomatoes, drained
– 2/3 cup chicken broth
– 1 1/2 cups heavy cream
– 3 cups baby spinach
– 1/2 cup fresh grated Parmesan cheese
– Salt and pepper to taste

Directions:

1. Brown sausage in a skillet, add onion, garlic, and spices.
2. Remove cooked sausage mixture, drain excess grease, and wipe skillet.
3. Cook gnocchi and sundried tomatoes until browned.
4. Add broth and cream, simmer until thickened.
5. Stir in spinach, Parmesan, and cooked sausage.
6. Season with salt and pepper.
