Ingredients:

1.5 lbs (680g) boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup (60ml) olive oil
2 tbsp lemon juice
2 tbsp orange juice
3 cloves garlic, minced
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
Salt and pepper to taste
Lemon wedges for serving
Wooden skewers, soaked in water for 30 minutes

Instructions:

Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, orange juice, minced garlic, fresh thyme, parsley, salt, and pepper. Add chicken pieces to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour.
Preheat Grill: Preheat grill to medium-high heat.
Prepare Skewers: Thread marinated chicken onto skewers.
