Salmon Burgers with Basil Mayo

Ingredients:

For the salmon burgers:

500g salmon fillets, skinless and boneless
1 garlic clove, minced
Zest of 1 lemon
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
Salt and freshly ground black pepper
1 tablespoon olive oil
4 burger buns, halved and toasted
Lettuce leaves, tomato slices, and red onion slices, for serving
For the basil mayo:

4 tablespoons mayonnaise
1 tablespoon chopped fresh basil
1 teaspoon lemon juice
Salt and freshly ground black pepper

Instructions:

Prepare the Salmon Burgers:

Finely chop the salmon fillets or pulse in a food processor until coarsely ground.
In a bowl, combine the chopped salmon, minced garlic, lemon zest, chopped parsley, chopped dill, chopped chives, salt, and pepper. Mix well until evenly combined.
Divide the mixture into 4 equal portions and shape into burger patties.
Cook the Salmon Patties:

Heat the olive oil in a frying pan over medium heat.
Cook the salmon patties for 3-4 minutes on each side, or until golden brown and cooked through.
Prepare the Basil Mayo:

In a small bowl, mix together the mayonnaise, chopped basil, lemon juice, salt, and pepper.
Assemble the Burgers:

Spread a generous amount of basil mayo on the bottom half of each toasted burger bun.
Place a lettuce leaf on top of the basil mayo, followed by a cooked salmon patty.
Top with tomato slices and red onion slices. Cover with the top half of the burger bun.
Serve:

Serve the salmon burgers hot, accompanied by your favorite sides.
