Ingredients:

– 2 lbs potatoes, washed and cubed (about 1-inch pieces)
– 2 tablespoons olive oil
– 1 packet (1 oz) ranch seasoning mix
– 1 cup shredded cheddar cheese
– Fresh parsley or chives, chopped (optional, for garnish)
– Salt and pepper, to taste

Directions:

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
2. Toss the cubed potatoes with olive oil until evenly coated in a large bowl.
3. Sprinkle the ranch seasoning mix over the potatoes and toss again to coat evenly.
4. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
5. Roast in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden brown, stirring halfway through cooking.
6. Remove from the oven and sprinkle shredded cheddar cheese over the hot potatoes. Return to the oven for 2-3 minutes, or until the cheese is melted.
7. Remove from the oven and let cool slightly. Garnish with chopped parsley or chives if desired.
8. Season with salt and pepper to taste before serving.
