Ingredients:
2 cups graham cracker crumbs
1/2 cup melted butter
2 tablespoons sugar
3 packages (8 ounces each) cream cheese, softened
1/2 cup sugar (adjust to taste)
1 teaspoon vanilla extract
2 cups whipped cream
1 cup finely chopped apples
1/4 cup butter
1/2 cup brown sugar
1/2 cup caramel sauce
1/4 cup chopped pecans
1 cup chopped apples
Directions:
In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press mixture into the bottom of a 9-inch springform pan. Refrigerate for 10 minutes.
In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add vanilla extract and mix until combined. Fold in whipped cream until well incorporated.
In a skillet, melt 1/4 cup butter over medium heat. Add finely chopped apples and brown sugar, stirring until apples are caramelized, about 5-7 minutes. Let cool slightly.
Pour half of the cream cheese mixture over the crust. Sprinkle with half of the caramelized apples.
Pour remaining cream cheese mixture over apples and top with remaining caramelized apples. Drizzle with caramel sauce.
Refrigerate for at least 4 hours or overnight until set.
Before serving, sprinkle with chopped pecans.
