Jerk Cajun Chicken with Sausage and Penne and Rotini Noodles

Ingredients:

– 2 chicken breasts, jerk seasoned
– 1/2 pound spicy sausage, sliced
– 1 cup penne pasta
– 1 cup rotini pasta
– 1 bell pepper, diced
– 1 onion, diced
– 2 cloves garlic, minced
– 1 cup tomato sauce
– 1/2 cup chicken broth
– 1 tablespoon Cajun seasoning
– 2 tablespoons olive oil
– Salt and pepper to taste

Directions:

1. Cook penne and rotini noodles in salted boiling water until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook until golden brown and fully cooked. Remove from skillet and set aside.
3. In the same skillet, add sausage slices and cook until browned. Remove and set aside with chicken.
4. In the remaining oil, sauté onion, bell pepper, and garlic until soft.
5. Slice the cooked chicken into strips and return to the skillet along with the sausage.
6. Add tomato sauce, chicken broth, and Cajun seasoning. Stir well and simmer for 10 minutes.
7. Toss in the cooked noodles, mix well, and season with salt and pepper.
8. Serve hot garnished with fresh parsley if desired.
